So many people call celiac disease an "allergy" or an "intolerance" -- but it's really neither. It's an autoimmune disease triggered by diet, and it will destroy your body. It's more useful to think of it like diabetes, but unlike diabetes, there is no safe quantity of the forbidden ingredient. Your body needs sugars to function (though it may have enough), but it does not need gluten.
